Ingredients
- 4 medium zucchinis
- 1 pound ground beef
- 1 cup diced tomatoes (canned or fresh)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the zucchinis by slicing them in half lengthwise and scooping out the seeds.
- Cook the onion in olive oil until translucent, then add garlic and ground beef, browning it fully.
- Season the beef with diced tomatoes, Italian seasoning, salt, and pepper, and cook for an additional 5 minutes.
- Fill each zucchini boat with the beef mixture.
- Top with shredded cheese.
- Bake covered for 20 minutes, then uncover and bake for 10 more minutes until cheese is bubbly.
