Ingredients
- 2 medium sweet potatoes, cubed
- 1 pound of halal chicken breast, diced
- 2 cups of kale, chopped
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 teaspoon ground cumin
- Optional: 1/4 cup feta cheese, crumbled (for serving)
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed sweet potatoes with olive oil, garlic powder, smoked paprika, cumin, salt, and pepper.
- Spread the seasoned sweet potatoes onto a baking sheet and roast for about 25-30 minutes.
- Heat a skillet over medium-high heat and cook the diced chicken with salt and pepper for about 6-8 minutes.
- Add the chopped kale to the skillet and sauté for an additional 2-3 minutes.
- Layer the roasted sweet potatoes, sautéed chicken, and kale in serving bowls, sprinkling with feta cheese if desired.
