Ingredients
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves of garlic, minced
- 3 cups shredded chicken (rotisserie or cooked)
- 6 cups chicken broth
- 2 medium potatoes, diced
- 1 cup cream (optional)
- Salt and pepper to taste
- A squeeze of lemon, chopped fresh dill or parsley, smoked paprika, or Dijon mustard (optional)
Instructions
- Heat a large pot over medium heat.
- Add onion, carrots, and celery; sauté until softened.
- Stir in garlic and cook until fragrant.
- Pour in the chicken broth and add diced potatoes.
- Simmer until potatoes are tender, about 15 minutes.
- Add shredded chicken and stir; cook for an additional 5 minutes.
- Stir in cream if desired, and season with salt, pepper, and optional flavor boosters.
- Serve warm or store for meal prep.
Notes
