Description

A warm and hearty Cowboy Butter Chicken coated in a rich, buttery sauce, perfect for cozy autumn dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper (adjust according to taste)
  • Juice of 1 lemon
  • Fresh parsley for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken breasts dry and season them with salt, black pepper, paprika, onion powder, and cayenne pepper.
  3. In a microwave-safe bowl, melt the unsalted butter and whisk in minced garlic, lemon juice, chopped parsley, and chopped basil.
  4. In a large skillet over medium-high heat, sear the chicken breasts for about 3-4 minutes on each side until golden brown.
  5. Transfer the seared chicken to a baking dish and pour the butter mixture over them.
  6. Bake for about 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Garnish with additional parsley before serving.

Notes

For a vegan alternative, substitute chicken with hearty vegetables and use vegan butter.
