These Cottage Cheese Breakfast Rounds are a simple, nourishing, and protein-packed way to start your day. Blended cottage cheese and eggs create a smooth, fluffy texture, while a quick cook on the griddle gives each round a beautiful golden finish.
Ingredients
- 1 cup (225g) low-fat cottage cheese
- 2 large eggs
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 pinch salt
- Cooking oil or butter, for cooking
Instructions
- Combine the cottage cheese, eggs, flour, baking powder, vanilla extract, and salt in a blender or food processor.
- Blend until the mixture is completely smooth and uniform.
- Lightly coat a non-stick griddle or frying pan with butter or cooking oil.
- Heat the cooking surface over medium heat.
- Pour about 1/4 cup of batter onto the hot surface for each round.
- Cook for 2-3 minutes, or until the bottom is golden brown and the center begins to set.
- Flip each round and cook for another 2-3 minutes until golden brown and cooked through.

Notes
