Ingredients
- 1 cup cottage cheese (preferably low-fat)
- 2 cups almond flour
- 3 large eggs
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 tablespoon honey or maple syrup (optional for sweetness)
- 1/2 teaspoon garlic powder (optional for flavor)
- 1 teaspoon dried herbs (optional)
- 1/4 cup milk or dairy-free alternative
- Optional mix-ins: chopped nuts, seeds, or dried fruit
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
- Combine the cottage cheese, eggs, and milk in a large mixing bowl. Whisk until smooth.
- Mix the almond flour, baking powder, salt, garlic powder, and dried herbs in another bowl.
- Add the dry mixture to the wet ingredients, stirring until fully incorporated. Mix in honey or optional mix-ins, if desired.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 45-50 minutes, or until golden brown and a toothpick inserted comes out clean.
- Remove from the oven and let cool for about 10 minutes before transferring to a wire rack.
