Ingredients

  • 1 cup cottage cheese (preferably low-fat)
  • 2 cups almond flour
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon honey or maple syrup (optional for sweetness)
  • 1/2 teaspoon garlic powder (optional for flavor)
  • 1 teaspoon dried herbs (optional)
  • 1/4 cup milk or dairy-free alternative
  • Optional mix-ins: chopped nuts, seeds, or dried fruit


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Combine the cottage cheese, eggs, and milk in a large mixing bowl. Whisk until smooth.
  3. Mix the almond flour, baking powder, salt, garlic powder, and dried herbs in another bowl.
