Ingredients
- 4 chicken breasts
- 1 can of coconut milk
- Juice of 2 limes
- Zest of 1 lime
- 2 cloves garlic, minced
- 1 tablespoon of fresh ginger, grated
- Salt and pepper to taste
- 2 tablespoons of olive oil
- Fresh cilantro for garnish
Instructions
- Start by marinating the chicken breasts. In a bowl, combine coconut milk, lime juice, lime zest, garlic, ginger, salt, and pepper. Place the chicken in the marinade for at least 30 minutes, or up to 2 hours if you have the time.
- Heat olive oil in a skillet over medium heat. Remove the chicken from the marinade (save the marinade) and cook the chicken for about 6-7 minutes per side, or until thoroughly cooked, with a nice golden-brown color.
- Pour the reserved marinade into the skillet once the chicken is cooked. Let it simmer for about 5 minutes to thicken while continuously stirring.
- Plate the chicken and drizzle the coconut lime sauce over the top. Garnish with fresh cilantro and enjoy with rice or a fresh salad for a complete meal.
Notes
Ensure the marinade is well mixed to coat the chicken uniformly. Allow the chicken to rest for a few minutes after cooking to keep it juicy. Fresh cilantro enhances flavor and adds a pop of color.
