Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1/2 cup honey, preferably local and pure
- 1-2 chipotle peppers in adobo sauce, finely chopped
- 4 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper, to taste
- Lime juice from 1 lime
- Cilantro, for garnish (optional)
Instructions
- Marinate the chicken: In a large bowl, combine honey, chipotle peppers, minced garlic, olive oil, salt, pepper, and lime juice. Add the chicken breasts, ensuring they are completely coated in the marinade. Cover and refrigerate for at least 60 minutes, or overnight for best flavor.
- Preheat your oven: When you’re ready to cook, preheat your oven to 375°F (190°C).
- Bake the chicken: Remove the marinated chicken from the refrigerator and place it in a baking dish. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Glaze with marinade: During the last 10 minutes of baking, drizzle some of the leftover marinade over the chicken for added flavor.
- Serve: Garnish with chopped cilantro if desired, and serve warm.
