  • 1 cup cherry tomatoes, halved
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh lemon juice (about 2 lemons)
  • ¼ cup olive oil
  • 1 teaspoon honey or maple syrup

Instructions

  1. Prepare the ingredients: Start by draining and rinsing the chickpeas to remove excess sodium. Meanwhile, dice the cucumber, avocado, and red onion; halve the cherry tomatoes, and chop the parsley.
