Ingredients
- 1 pound of chicken breast, sliced into thin strips
- 2 medium zucchinis, sliced into half-moons
- 1 red bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: red pepper flakes for heat
Instructions
- Heat the oil: In a large skillet or wok, heat the olive oil over medium-high heat.
- Cook the chicken: Add the sliced chicken breast to the skillet, seasoning with salt and pepper. Cook for about 5-7 minutes, stirring frequently until browned and cooked through. Remove the chicken and set aside.
- Sauté vegetables: In the same skillet, add the sliced onion, bell pepper, and zucchini. Stir-fry for about 4-5 minutes until tender yet crisp.
- Add garlic and chicken: Toss in the minced garlic and cooked chicken. Pour in the soy sauce and stir-fry for another 2-3 minutes, ensuring even coating.
- Serve: Taste and adjust seasoning if necessary. Serve hot over rice or noodles.
