Description

A cozy and comforting Chicken Teriyaki Rice Bowl featuring tender chicken coated in homemade teriyaki sauce served over fluffy rice.


Ingredients

  • 2 large chicken breasts, diced into bite-sized pieces
  • 1 cup jasmine or basmati rice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water


Instructions

  1. Start by rinsing the rice under cold water until the water runs clear.
  2. Cook according to package instructions.
  3. In a small saucepan, combine soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil. Heat until simmering.
  4. Stir in the cornstarch mixture and continue cooking until the sauce thickens, about 2-3 minutes.
  5. Heat olive oil in a large skillet over medium-high heat. Add seasoned diced chicken and cook for 5-7 minutes until fully cooked.
  6. Pour the teriyaki sauce over the chicken and toss to coat evenly.
  7. Divide the cooked rice into bowls, top with the teriyaki chicken, and garnish if desired.
