Description

A warm, hearty low carb oven dish that captures the essence of fall with comforting flavors of chicken, spinach, and mushrooms.


Ingredients

  • 2 cups of fresh spinach
  • 1 pound of chicken breast, diced
  • 1 cup of mushrooms, sliced
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of cream cheese
  • 2 teaspoons of garlic powder
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the diced chicken breast in olive oil, seasoning with salt, pepper, and garlic powder, until browned.
  3. Add the sliced mushrooms and fresh spinach to the skillet and cook until the spinach wilts.
  4. Create the creamy mixture by mixing the cream cheese until smooth and folding in half of the shredded mozzarella.
  5. Combine the chicken, mushroom, and spinach mixture with the cream cheese mixture in a baking dish. Top with the remaining mozzarella cheese.
  6. Bake for 20-25 minutes until the cheese is bubbly and golden.

Notes

Use fresh ingredients for the best flavor and texture. Don’t overcook the chicken to keep it juicy.
