Description
A warm and comforting Chicken and Spinach Casserole with Cream Cheese that highlights the flavors of fall, perfect for family gatherings.
Ingredients
- 2 cups cooked chicken, shredded or diced
- 2 cups fresh spinach, chopped (or frozen, thawed and drained)
- 1 package (8 oz) cream cheese, softened
- 1 cup sour cream
- 1 cup grated cheese (such as mozzarella or cheddar)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup breadcrumbs or crushed crackers (optional for topping)
- 1 tablespoon olive oil or butter (for greasing the casserole dish)
Instructions
- Prepare the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch casserole dish with olive oil or butter to prevent sticking.
- Mix the Base: In a large bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix until smooth and creamy. Stir in the cooked chicken and chopped spinach until everything is evenly coated.
- Add Cheese: Fold in half of the grated cheese into the chicken and spinach mixture. Set aside the other half for the topping.
- Transfer to Dish: Pour the mixture into the greased casserole dish, spreading it out evenly.
- Top It Off: Sprinkle the reserved cheese over the top of the casserole. If you want to add some crunch, mix breadcrumbs or crushed crackers with a bit of olive oil and sprinkle that on as well.
- Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbling.
- Serve and Enjoy: Once your Chicken and Spinach Casserole with Cream Cheese is done, let it cool slightly before serving.
