Ingredients
- 4 chicken thighs (bone-in, skin-on)
- 4 medium-sized potatoes (peeled and diced)
- 1 large onion (thinly sliced)
- 4 cloves garlic (minced)
- 1 cup chicken broth (low-sodium)
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400ยฐF (200ยฐC).
- Prepare the chicken by patting it dry and seasoning with salt, pepper, paprika, and thyme.
- Brown the chicken in a large skillet with olive oil over medium-high heat for about 5-7 minutes.
- Transfer the chicken to a plate and set aside.
- Sautรฉ the onion in the same skillet for 2-3 minutes, then add garlic.
- Combine the potatoes and broth in the skillet, adjusting seasoning if necessary.
- Nestle the chicken back into the skillet with the potatoes.
- Bake covered for 30 minutes, then uncover for the last 15 minutes.
- Serve hot, garnished with parsley if desired.
Notes
For best results, use bone-in, skin-on chicken for added flavor. You can also add vegetables like carrots or green beans.
