Ingredients
- 2 large chicken breasts, sliced thinly
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- Salt and pepper to taste
- 4 hoagie rolls
- 8 slices of provolone cheese (or your favorite cheese for melting)
Instructions
- Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken breasts and season with salt and pepper. Sauté for about 5-7 minutes or until the chicken is cooked through and no longer pink.
- Add the Vegetables: Next, add the sliced onions and bell peppers to the skillet with the chicken. Continue to sauté for an additional 5 minutes, or until the vegetables have softened and caramelized slightly.
- Melt the Cheese: Once the chicken and vegetables are ready, lower the heat and place the provolone cheese slices on top. Cover the skillet for a few minutes to help the cheese melt beautifully into the mixture.
- Assemble the Sandwiches: While the cheese is melting, slice open your hoagie rolls. Once the cheese is melted and perfectly gooey, spoon the chicken and vegetable mixture into the rolls.
