Ingredients
- 2 cups of penne pasta
- 1 pound of chicken breast, diced
- 1 cup of mozzarella cheese, shredded
- 2 cups of fresh spinach
- 1 garlic clove, minced
- 1 can (14 oz) of diced tomatoes
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Cook the pasta: Begin by boiling a pot of salted water. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
- Sauté the chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes until the chicken is golden brown and cooked through.
- Add garlic and tomatoes: Once the chicken is cooked, add the minced garlic and cook for another minute until fragrant. Next, pour in the canned diced tomatoes (including their juices) and stir well.
- Incorporate spinach: Add the fresh spinach to the skillet and cook until wilted.
- Combine with pasta: Toss the cooked pasta into the skillet, mixing everything together. Then, stir in the shredded mozzarella until it’s melted and evenly distributed.
- Adjust seasoning: Taste the dish and adjust seasonings as necessary.
- Serve and garnish: Plate your Chicken Mozzarella Pasta and garnish with fresh basil if desired.
Notes
For a creamier sauce, you can stir in a splash of heavy cream or a dollop of cream cheese towards the end of cooking.
