Description

Ingredients

  • 2 cups of penne pasta
  • 1 pound of chicken breast, diced
  • 1 cup of mozzarella cheese, shredded
  • 2 cups of fresh spinach
  • 1 garlic clove, minced
  • 1 can (14 oz) of diced tomatoes
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)


Instructions

  1. Cook the pasta: Begin by boiling a pot of salted water. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Sauté the chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes until the chicken is golden brown and cooked through.
  3. Add garlic and tomatoes: Once the chicken is cooked, add the minced garlic and cook for another minute until fragrant. Next, pour in the canned diced tomatoes (including their juices) and stir well.
  4. Incorporate spinach: Add the fresh spinach to the skillet and cook until wilted.
  5. Combine with pasta: Toss the cooked pasta into the skillet, mixing everything together. Then, stir in the shredded mozzarella until it’s melted and evenly distributed.
  6. Adjust seasoning: Taste the dish and adjust seasonings as necessary.

Notes

For a creamier sauce, you can stir in a splash of heavy cream or a dollop of cream cheese towards the end of cooking.
