A comforting and hearty casserole that transforms traditional fajitas into a cozy, delicious dish.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 packet fajita seasoning
- 1 can diced tomatoes with green chilies
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup tortilla chips, crushed
- Sour cream, for serving
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the shredded chicken, black beans, corn, sliced bell pepper, onion, fajita seasoning, and diced tomatoes in a large bowl. Stir until well mixed.
- Spread half of the chicken mixture evenly across the bottom of a greased baking dish. Layer half of the cheese on top, followed by half of the crushed tortilla chips.
- Repeat the layers with the remaining chicken mixture, cheese, and crushed tortilla chips.
- Cover the baking dish with aluminum foil and bake for 25 minutes. After that, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Allow the casserole to cool slightly before serving with a dollop of sour cream on top.
Notes
Use leftover roasted chicken or store-bought rotisserie chicken for added flavor. Keep an eye on the casserole to avoid overbaking.
