Ingredients
- 1 lb lean ground chicken
- 8-10 small flour tortillas
- 1 head romaine lettuce, finely chopped
- 1/2 cup creamy Caesar dressing
- 1/4 cup freshly grated Parmesan cheese
- 2 tbsp olive oil
- 1/2 tsp onion powder
- 1/4 tsp freshly ground black pepper
Instructions
- In a bowl, combine the ground chicken, onion powder, and black pepper until evenly mixed.
- Divide the mixture into 8-10 equal portions.
- Spread each portion thinly over one side of a flour tortilla, pressing to the edges.
- Heat olive oil in a large skillet over medium-high heat.
- Place each tortilla chicken-side down and cook for 3-4 minutes until the chicken is browned and fully cooked.
- Flip and cook the tortilla side for 1-2 minutes until lightly toasted and crispy.
- In a separate bowl, toss the chopped romaine lettuce with the Caesar dressing.
- Top each cooked taco with the dressed romaine.
- Sprinkle generously with freshly grated Parmesan cheese.
- Serve immediately while warm and crispy.

For the crispiest smash tacos, press the chicken into a thin, even layer and cook in a hot skillet without overcrowding. Assemble just before serving to keep the tortillas crisp.
