A delightful Chicken Burrito Casserole perfect for cozy family dinners, filled with layers of flavor and spices.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheese (cheddar or a blend)
- 6-8 flour tortillas (or corn tortillas for a gluten-free option)
- Optional toppings: avocado, sour cream, cilantro
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and cooked rice in a large mixing bowl. Stir until well-mixed.
- Prepare the baking dish by greasing it lightly with cooking spray. Layer a few tortillas at the bottom of the dish.
- Spoon half of the chicken mixture evenly over the tortilla layer.
- Sprinkle half of the cheese on top of the chicken mixture.
- Repeat the layers with more tortillas, the remaining chicken mixture, and finish with another tortilla layer. Top with the remaining cheese.
- Cover the dish with foil and bake for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving. Garnish with avocado, sour cream, or cilantro.
Notes
For a quicker prep time, use leftover rotisserie chicken. Customize with additional veggies or different cheese types.
