Description

A delightful Chicken Burrito Casserole perfect for cozy family dinners, filled with layers of flavor and spices.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or a blend)
  • 6-8 flour tortillas (or corn tortillas for a gluten-free option)
  • Optional toppings: avocado, sour cream, cilantro


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and cooked rice in a large mixing bowl. Stir until well-mixed.
  3. Prepare the baking dish by greasing it lightly with cooking spray. Layer a few tortillas at the bottom of the dish.
  4. Spoon half of the chicken mixture evenly over the tortilla layer.
  5. Sprinkle half of the cheese on top of the chicken mixture.
  6. Repeat the layers with more tortillas, the remaining chicken mixture, and finish with another tortilla layer. Top with the remaining cheese.
  7. Cover the dish with foil and bake for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving. Garnish with avocado, sour cream, or cilantro.

Notes

For a quicker prep time, use leftover rotisserie chicken. Customize with additional veggies or different cheese types.
