A comforting meatloaf casserole topped with creamy mashed potatoes and cheese, perfect for cozy fall gatherings.
Ingredients
- 1 pound ground beef
- 1 cup breadcrumbs
- 1/2 cup diced onion
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 1 large egg
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
- 1 cup mashed potatoes
- 1/2 cup milk
- 1 cup shredded cheese (cheddar or a blend)
- 1/2 cup cooked bacon bits (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the ground beef, breadcrumbs, diced onion, cheddar cheese, milk, egg, Worcestershire sauce, salt, and pepper in a large bowl. Mix until well combined.
- Shape the meat mixture into a loaf and place it in a greased baking dish.
- Bake for 45 minutes or until the internal temperature reaches 160°F (71°C).
- While the meatloaf is baking, prepare the topping by mixing the mashed potatoes with milk until smooth.
- Once the meatloaf is done, remove it from the oven and spread the mashed potatoes over the top. Sprinkle shredded cheese and bacon bits on top if desired.
- Return the casserole to the oven and bake for an additional 15-20 minutes, until the cheese is bubbly and golden.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. This dish also freezes well.
