Description

A comforting meatloaf casserole topped with creamy mashed potatoes and cheese, perfect for cozy fall gatherings.


Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup diced onion
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1 large egg
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • 1 cup mashed potatoes
  • 1/2 cup milk
  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup cooked bacon bits (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the ground beef, breadcrumbs, diced onion, cheddar cheese, milk, egg, Worcestershire sauce, salt, and pepper in a large bowl. Mix until well combined.
  3. Shape the meat mixture into a loaf and place it in a greased baking dish.
  4. Bake for 45 minutes or until the internal temperature reaches 160°F (71°C).
  5. While the meatloaf is baking, prepare the topping by mixing the mashed potatoes with milk until smooth.
  6. Once the meatloaf is done, remove it from the oven and spread the mashed potatoes over the top. Sprinkle shredded cheese and bacon bits on top if desired.
  7. Return the casserole to the oven and bake for an additional 15-20 minutes, until the cheese is bubbly and golden.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. This dish also freezes well.
