Description

A comforting casserole with savory ground beef, tender rice, and ooey-gooey cheese, perfect for family dinners.


Ingredients

  • 1 pound ground beef
  • 1 cup uncooked rice (white or brown)
  • 1 large onion, diced
  • 2 cups beef broth
  • 2 cups shredded cheddar cheese
  • 1 can cream of mushroom soup (or gluten-free alternative)
  • Salt and pepper, to taste
  • Optional: 1 cup frozen mixed vegetables or fresh bell peppers


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef with diced onion over medium heat. Season with salt and pepper.
  3. Combine cream of mushroom soup, beef broth, uncooked rice, and optional vegetables with the beef.
  4. Transfer the mixture to a greased 9×13 inch casserole dish.
  5. Top with shredded cheddar cheese.
  6. Bake covered for 30 minutes, then uncovered for an additional 10-15 minutes, until cheese is bubbly and golden.
