Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- 3-4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 4 large flour tortillas (or gluten-free wraps)
- 1 cup fresh spinach or arugula
- Optional: Sliced tomatoes, green onions, or jalapeños
Instructions
- Prep the chicken mixture: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Next, add the cooked chicken, Italian seasoning, salt, and pepper. Stir well and allow to cook for about 5 minutes until heated through.
- Add the cheese: Sprinkle the shredded cheese over the chicken mix, allowing it to melt gently. Stir until the cheese is fully melted and coats the chicken.
- Assemble the wraps: Lay the tortillas flat on a clean surface. Place a generous amount of the cheesy chicken mixture in the center of each tortilla. Top with fresh spinach, sliced tomatoes, or any additional toppings you prefer.
- Wrap it up: Carefully fold the sides of the tortilla over the filling, then roll the tortilla up tightly from the bottom to the top.
- Cook the wraps: You can either grill the wraps on a skillet until golden brown and crispy (about 3-4 minutes on each side) or pop them into a preheated oven at 375°F (190°C) for about 10 minutes for an oven-baked version.
- Serve and enjoy: Slice the wraps diagonally in half and serve hot with your favorite dipping sauce or a side salad!
Notes
For extra flavor, try adding sliced jalapeños or doubling the cheese. Leftover grilled chicken works perfectly for this recipe.
