Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 3-4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 large flour tortillas (or gluten-free wraps)
  • 1 cup fresh spinach or arugula
  • Optional: Sliced tomatoes, green onions, or jalapeños


Instructions

  1. Prep the chicken mixture: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Next, add the cooked chicken, Italian seasoning, salt, and pepper. Stir well and allow to cook for about 5 minutes until heated through.
  2. Add the cheese: Sprinkle the shredded cheese over the chicken mix, allowing it to melt gently. Stir until the cheese is fully melted and coats the chicken.
  3. Assemble the wraps: Lay the tortillas flat on a clean surface. Place a generous amount of the cheesy chicken mixture in the center of each tortilla. Top with fresh spinach, sliced tomatoes, or any additional toppings you prefer.
  4. Wrap it up: Carefully fold the sides of the tortilla over the filling, then roll the tortilla up tightly from the bottom to the top.
  5. Cook the wraps: You can either grill the wraps on a skillet until golden brown and crispy (about 3-4 minutes on each side) or pop them into a preheated oven at 375°F (190°C) for about 10 minutes for an oven-baked version.
  6. Serve and enjoy: Slice the wraps diagonally in half and serve hot with your favorite dipping sauce or a side salad!

Notes
