Description

A creamy and cheesy casserole filled with broccoli and chicken, perfect for a comforting family meal.


Ingredients

  • 2 cups cooked rice (white or brown)
  • 2 cups cooked chicken, diced
  • 2 cups fresh broccoli florets (or frozen, if preferred)
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: herbs like thyme or parsley for added flavor


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cooked rice, diced chicken, and broccoli florets in a large mixing bowl. Add in the condensed cream of chicken soup, milk, garlic powder, salt, and pepper. Stir until well mixed.
  3. Transfer the mixture into a greased 9×13-inch baking dish. Smooth the top and sprinkle shredded cheddar cheese evenly over the casserole.
  4. Bake covered with aluminum foil in the preheated oven for 25 minutes. Remove foil and bake for an additional 15 minutes, until cheese is melted and bubbly.
  5. Let the casserole sit for about 5–10 minutes before serving.

Notes

Use leftover chicken for added flavor. Don’t overcook the broccoli and feel free to experiment with cheese types.
