A creamy and cheesy casserole filled with broccoli and chicken, perfect for a comforting family meal.
Ingredients
- 2 cups cooked rice (white or brown)
- 2 cups cooked chicken, diced
- 2 cups fresh broccoli florets (or frozen, if preferred)
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Optional: herbs like thyme or parsley for added flavor
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the cooked rice, diced chicken, and broccoli florets in a large mixing bowl. Add in the condensed cream of chicken soup, milk, garlic powder, salt, and pepper. Stir until well mixed.
- Transfer the mixture into a greased 9×13-inch baking dish. Smooth the top and sprinkle shredded cheddar cheese evenly over the casserole.
- Bake covered with aluminum foil in the preheated oven for 25 minutes. Remove foil and bake for an additional 15 minutes, until cheese is melted and bubbly.
- Let the casserole sit for about 5–10 minutes before serving.
Notes
Use leftover chicken for added flavor. Don’t overcook the broccoli and feel free to experiment with cheese types.
