Cheesy Broccoli Balls are a cozy, comforting treat perfect for autumn gatherings. Easy to make and enjoyed by all ages, these cheesy bites can be baked, fried, or air-fried.
Ingredients
- 3 cups finely chopped fresh broccoli (or thawed, well-drained frozen broccoli)
- 1 cup grated cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup plain breadcrumbs
- 2 large eggs, beaten
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup plain Greek yogurt or plain yogurt
- 1 teaspoon Dijon mustard
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2–3 tablespoons olive oil for brushing or frying
- Optional: chopped fresh herbs (parsley or chives) for flavor
Instructions
- Prep the broccoli: If using fresh broccoli, steam florets until just tender (about 4–5 minutes), then cool and finely chop. If using frozen, thaw and squeeze out as much moisture as possible using a clean towel.
- Mix the base: In a large bowl, combine the chopped broccoli, grated cheddar, grated Parmesan, breadcrumbs, chopped onion, minced garlic, and chopped herbs if using.
- Add binders and seasoning: Stir in the beaten eggs, yogurt, Dijon mustard, smoked paprika, salt, and pepper. Mix thoroughly—mixture should hold together when pressed. If too wet, add 2 tablespoons more breadcrumbs; if too dry, add a splash of yogurt.
- Shape the balls: Scoop about 1 to 1.5 tablespoons of mixture and roll into compact balls. Place on a parchment-lined baking sheet.
- Cook options: Baked: Preheat oven to 400°F (200°C). Lightly brush each ball with olive oil and bake 12–15 minutes until golden and cheese is bubbly. Pan-fried: Heat 2 tablespoons olive oil in a skillet over medium heat. Fry in batches, turning frequently, until evenly browned and cooked through (about 6–8 minutes). Air-fryer: Preheat to 375°F (190°C). Spray or brush balls with oil and air-fry 8–10 minutes, shaking halfway through.

Notes
