A vibrant, flavorful, and incredibly simple Caprese dense bean salad featuring creamy fresh mozzarella, juicy cherry tomatoes, tender cannellini beans, fresh basil, red onion, and a rich balsamic glaze.
Ingredients
- 2 cups cherry tomatoes, halved
- 8 ounces fresh mozzarella balls (pearls or ciliegine)
- 1 (15-ounce) can cannellini beans, rinsed and drained
- 1/2 cup fresh basil leaves, roughly chopped or torn
- 1/4 cup red onion, thinly sliced
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic glaze
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Halve the cherry tomatoes and thinly slice the red onion. Roughly chop or tear the fresh basil leaves.
- Add the rinsed and drained cannellini beans, cherry tomatoes, sliced red onion, and fresh mozzarella balls to a large bowl.
- Gently toss the ingredients together until evenly combined.
- Drizzle the salad with extra virgin olive oil and balsamic glaze.
- Season generously with salt and freshly ground black pepper to taste.
- Add the fresh basil leaves and gently toss one final time to distribute the flavors evenly.
- Allow the salad to sit for 10-15 minutes before serving so the flavors can meld together beautifully.
- Serve immediately or chill until ready to enjoy.
Notes
Use ripe, firm cherry tomatoes, fresh mozzarella, and high-quality extra virgin olive oil for the best flavor. Thoroughly rinse and drain the cannellini beans before adding them to the salad. Store leftovers in an airtight container in the refrigerator for up to 3 days.
