Ingredients
- 4 large bell peppers (red, yellow, or green)
- 2 cups shredded cooked chicken
- 1/2 cup buffalo sauce (adjust according to your spice preference)
- 1/2 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/4 cup green onions, chopped
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the peppers by cutting the tops off and removing the seeds and membranes.
- Make the filling by combining shredded chicken, buffalo sauce, cream cheese, 1/2 cup mozzarella, and green onions in a bowl. Season with salt and pepper.
- Stuff each pepper with the buffalo chicken mixture and place them upright in a baking dish.
- Bake covered with foil for 25-30 minutes, then remove the foil, top with remaining mozzarella, and bake for an additional 10-15 minutes until cheese is bubbly and golden.
Notes
Adjust spice levels with the buffalo sauce. Pair with a side salad for a complete meal.
