- 2 large chicken breasts

- ¼ cup fresh basil, chopped
- 2 cups diced tomatoes

Instructions
- Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.
- Prepare the Chicken: While the pasta cooks, season the chicken breasts with olive oil, garlic powder, salt, and pepper. Heat a skillet over medium heat and add the chicken. Cook for about 6-7 minutes on each side or until fully cooked through.
- Make the Bruschetta Topping: In a mixing bowl, combine the diced tomatoes, minced garlic, balsamic vinegar, olive oil, salt, and pepper. Mix well and allow it to sit for at least 10 minutes to let the flavors meld.
- Combine the Ingredients: Slice the cooked chicken into strips. In a large serving bowl, toss the cooked pasta, chicken, diced mozzarella, and bruschetta topping together gently until everything is well mixed.
- Garnish and Serve: Just before serving, sprinkle fresh basil on top. This dish can be served warm or at room temperature, making it perfect for entertaining.
