Ingredients
- 2 cups cooked pasta (penne or fusilli work great)
- 2 boneless, skinless chicken breasts
- 2 cups diced tomatoes
- 1/2 cup fresh basil, finely chopped
- 4 cloves garlic, minced
- 1/4 cup balsamic vinegar
- 1/4 cup olive oil
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
Instructions
- Prepare the chicken: Season the chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Cook the chicken for about 6-7 minutes on each side until thoroughly cooked. Once done, remove the chicken and let it rest before slicing.
- Make the bruschetta topping: In a medium bowl, combine diced tomatoes, minced garlic, fresh basil, balsamic vinegar, and the remaining olive oil. Mix well and season with salt and pepper to enhance the flavors.
- Combine everything: In the same skillet you used for the chicken, add the cooked pasta. Pour in the bruschetta topping and toss gently to coat. Allow it to heat through for about 2-3 minutes.
- Serve: Plate the pasta and top each serving with slices of chicken and a generous sprinkle of grated Parmesan cheese.
