Description

A delightful blend of sweet brown sugar and tangy pineapple creates a comforting meal perfect for fall.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup brown sugar
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 can (15 oz) pineapple chunks, drained
  • Optional: sliced green onions and sesame seeds for garnish


Instructions

  1. Marinate the Chicken: In a medium bowl, mix together the brown sugar, pineapple juice, soy sauce, ginger, garlic, salt, and pepper. Place the chicken breasts into a resealable plastic bag and pour the marinade over. Seal the bag and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).
  2. Preheat the Oven: Preheat your oven to 375°F (190°C).
  3. Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium heat. Remove the chicken from the marinade (reserving the marinade) and sear each breast for about 3-4 minutes on each side, until golden brown.
  4. Add Pineapple: Pour the reserved marinade over the chicken and add the drained pineapple chunks to the skillet.
  5. Bake: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
  6. Serve: Once cooked, remove from the oven and let it rest for a few minutes. Drizzle with the pan sauce, garnish with green onions and sesame seeds if desired, and serve warm alongside your favorite rice or vegetables.
