Description

A comforting dish that blends sweet and savory flavors, perfect for cozy fall evenings, served over rice.

Ingredients

  • 1 pound boneless, skinless chicken thighs or breasts
  • 1/2 cup bourbon (or non-alcoholic bourbon alternative)
  • 1/4 cup soy sauce (gluten-free if preferred)
  • 1/2 cup brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Cooked rice for serving

Instructions

  1. Prep the chicken by cutting it into bite-sized pieces.
  2. Make the marinade by combining bourbon, soy sauce, brown sugar, garlic, and ginger in a bowl.
  3. Marinate the chicken pieces in the marinade for at least 30 minutes in the refrigerator.
  4. Cook the marinated chicken in a skillet with heated vegetable oil until browned on all sides, about 6-8 minutes.
  5. Add the reserved marinade to the skillet and simmer for about 10-15 minutes.
  6. Thicken the sauce by stirring in a cornstarch slurry and cooking for an additional 1-2 minutes.
  7. Serve the Bourbon Chicken over rice and garnish with chopped green onions.

Notes

Adjust the sweetness of the glaze and watch the heat while cooking to prevent burning.
