Ingredients
- 1 pound chicken breast, cut into bite-sized pieces
- 1 bell pepper (any color), sliced
- 1 onion, sliced
- 2 tablespoons black pepper
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 2 tablespoons olive oil
- 1 tablespoon honey (optional for sweetness)
- Salt to taste
- Cooked rice for serving
Instructions
- Prepare the Chicken: In a large bowl, combine chicken pieces with soy sauce, honey, and black pepper. Allow it to marinate for at least 15 minutes.
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated chicken, and cook until golden brown and thoroughly cooked, about 7-10 minutes. Remove chicken from the skillet and set aside.
- Sauté the Vegetables: In the same skillet, add another tablespoon of olive oil. Toss in the sliced bell peppers and onions, stirring frequently for about 5-7 minutes until tender.
- Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Add additional black pepper and salt to taste and stir everything together, allowing the flavors to meld for another 2-3 minutes.
- Serve: Serve hot over steamed rice or use it as a filling for wraps or tacos.
