Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup shredded cheese (mozzarella, cheddar, or a blend)
- 1/2 cup cream cheese, softened
- 1/4 cup fresh spinach, chopped (or any seasonal greens)
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
- Optional: fresh herbs for garnish (like parsley or basil)
Instructions
- Prepare the Chicken: Preheat your oven to 375°F (190°C). Place the chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness using a meat mallet.
- Make the Filling: In a mixing bowl, combine the shredded cheese, cream cheese, chopped spinach, minced garlic, Italian seasoning, salt, and pepper. Mix until well incorporated.
- Stuff the Chicken: Carefully cut a pocket into the side of each chicken breast and spoon the cheese filling into the pocket.
- Seal the Chicken: Use toothpicks to secure the edges of the stuffed chicken breasts.
- Sear for Flavor: Heat olive oil in a large oven-safe skillet and sear the stuffed chicken breasts for about 4-5 minutes on each side.
- Bake to Perfection: Transfer the skillet to the oven and bake for about 20-25 minutes until cooked through.
- Rest and Serve: Let the chicken rest for 5 minutes before slicing. Garnish with fresh herbs if desired.
Notes
Don’t overstuff the chicken to prevent bursting. Using a meat thermometer, ensure the internal temperature reaches 165°F (75°C).
