Description

Ingredients

  • 2 large chicken breasts (halal)
  • 1 cup BBQ sauce (choose your favorite brand)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 large sweet potatoes, peeled and cubed
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1 cup corn (can be canned or frozen)
  • 1 avocado, diced
  • Fresh cilantro, for garnish
  • Crumbled feta cheese (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes in a bowl with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  3. Spread the sweet potatoes on a baking sheet in a single layer.
  4. Roast them for 25-30 minutes, or until they are tender and golden brown, flipping halfway through.
  5. Season the chicken breasts with salt, pepper, and olive oil.
  6. Heat a large skillet over medium heat and cook the chicken for about 6-7 minutes on each side.
  7. Remove the chicken from the skillet and let it rest before shredding it with a fork.
  8. Add the shredded chicken to the skillet and toss in BBQ sauce. Warm it up for a few minutes.
  9. Layer roasted sweet potatoes, BBQ chicken, corn, and avocado in large bowls.
  10. Top with fresh cilantro and crumbled feta cheese if desired.
