Ingredients
- 2 large chicken breasts (halal)
- 1 cup BBQ sauce (choose your favorite brand)
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 2 large sweet potatoes, peeled and cubed
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1 cup corn (can be canned or frozen)
- 1 avocado, diced
- Fresh cilantro, for garnish
- Crumbled feta cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed sweet potatoes in a bowl with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Spread the sweet potatoes on a baking sheet in a single layer.
- Roast them for 25-30 minutes, or until they are tender and golden brown, flipping halfway through.
- Season the chicken breasts with salt, pepper, and olive oil.
- Heat a large skillet over medium heat and cook the chicken for about 6-7 minutes on each side.
- Remove the chicken from the skillet and let it rest before shredding it with a fork.
- Add the shredded chicken to the skillet and toss in BBQ sauce. Warm it up for a few minutes.
- Layer roasted sweet potatoes, BBQ chicken, corn, and avocado in large bowls.
- Top with fresh cilantro and crumbled feta cheese if desired.
