Ingredients
- 1 pound boneless, skinless chicken thighs or breasts
- 1/2 cup cornstarch
- Salt and pepper to taste
- 1 teaspoon garlic powder
- Olive oil or halal vegetable oil for frying
- 1/2 cup mayonnaise
- 1 tablespoon chili garlic sauce (adjust to taste)
- 1 teaspoon honey or maple syrup (for vegan alternative)
- 1 teaspoon soy sauce or coconut aminos (for gluten-free)
- 2 cups cooked jasmine rice or alternative grain
- 1 cup shredded lettuce (green leaf or romaine)
- 1/2 cup sliced cucumbers
- 1/2 cup shredded carrots
- Green onions, chopped (for garnish)

Instructions
- Prepare the chicken: Pat the chicken dry using paper towels, then toss with salt, pepper, and garlic powder. Dredge in cornstarch until evenly coated.
- Fry the chicken: Heat olive oil in a skillet over medium-high heat. Add chicken pieces and cook for 6-7 minutes on each side until golden brown and cooked through. Remove to a paper towel-lined plate.
- Whisk together the Bang Bang sauce: In a small bowl, mix mayonnaise, chili garlic sauce, honey, and soy sauce, adjusting spice level as desired.
- Assemble your bowl: Start with jasmine rice as the base, layer with lettuce, cucumbers, and carrots. Add crispy chicken and drizzle with Bang Bang sauce. Garnish with green onions and sesame seeds.
