Description

A warm and comforting Bang Bang Chicken Bowl packed with high protein and vibrant flavors, perfect for a quick supper solution.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 2 tablespoons cornstarch
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon lime juice
  • 2 cups cooked rice (white or brown)
  • 1 cup shredded lettuce
  • 1/2 cup chopped cucumbers
  • Green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Prepare the Chicken: Start by cutting the chicken breasts into bite-sized pieces. Season them with salt and pepper, and toss them with olive oil and cornstarch until well coated.
  2. Cook the Chicken: In a skillet over medium-high heat, cook the chicken until golden brown and cooked through, about 6-8 minutes. Ensure to stir frequently for even cooking.
  3. Make the Bang Bang Sauce: While the chicken is cooking, mix the mayonnaise, sweet chili sauce, sriracha, and lime juice in a bowl. Adjust the sriracha level according to your heat preference.
  4. Assemble the Bowl: In a serving bowl, layer the rice as the base, and add the cooked chicken on top. Drizzle the Bang Bang sauce generously over the chicken.
  5. Add Fresh Toppings: Top with shredded lettuce, chopped cucumbers, green onions, and sesame seeds for added crunch and flavor.

Notes

To save time, you can use pre-cooked rotisserie chicken. Feel free to add red pepper flakes for extra spice.
