Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup of fresh orange juice
  • 1/4 cup of soy sauce (or a gluten-free alternative)
  • 1/4 cup of honey
  • 1 tablespoon of cornstarch
  • 2 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • Zest from one orange
  • Salt and pepper to taste
  • Fresh cilantro for garnish


Instructions

  1. Preheat your oven to 400°F (200°C). While waiting, prepare your chicken breasts by patting them dry and seasoning them with salt and pepper.
  2. In a medium saucepan, combine fresh orange juice, soy sauce, honey, minced garlic, grated ginger, and orange zest. Bring the mixture to a simmer over medium heat. Once simmering, mix the cornstarch with a tablespoon of water and stir it into the sauce. Cook until thickened and remove from heat.
  3. Arrange the seasoned chicken breasts in a baking dish. Pour the orange sauce over the chicken, making sure each piece is well coated. Bake in the oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  4. Once baked, let the chicken rest for a few minutes before slicing. Serve the chicken garnished with fresh cilantro and drizzle additional orange sauce if desired.

Notes

For enhanced flavor, marinate the chicken in the sauce for 1-2 hours before baking. Use fresh oranges instead of bottled juice for better flavor.
