Ingredients
- 4 boneless skinless chicken breasts
- ½ cup fresh orange juice
- Zest of 1 orange
- ¼ cup soy sauce
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Combine the fresh orange juice, orange zest, soy sauce, honey, olive oil, minced garlic, and grated ginger in a mixing bowl.
- Season the chicken breasts with salt and pepper, then place them in a zip-lock bag or shallow dish and pour the marinade over. Seal and refrigerate for at least 30 minutes.
- Preheat your oven to 400°F (200°C). Remove the chicken from the fridge.
- Arrange the chicken breasts in a greased baking dish, pouring any remaining marinade over the top.
- Bake for 25–30 minutes or until the chicken is cooked through and has an internal temperature of 165°F (75°C).
- Let the chicken rest for 5 minutes before slicing to retain juiciness.
Notes
For maximum flavor, marinate the chicken for a few hours or even overnight. Serve with steamed rice or a fresh salad and garnish with chopped green onions.
