Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 pound baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, for garnish


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, whisk together olive oil, minced garlic, grated Parmesan cheese, Italian seasoning, salt, and pepper.
  3. Add the chicken thighs to the bowl, ensuring they are coated in the marinade.
  4. Toss the halved baby potatoes in a separate bowl with some of the remaining marinade.
  5. Place the marinated chicken thighs skin-side up in a large baking dish and scatter the coated potatoes around the chicken.
  6. Bake for 40-45 minutes, or until the chicken reaches 165°F (75°C) internal temperature and the potatoes are fork-tender.
