A cozy and easy air fryer recipe featuring juicy chicken breasts stuffed with creamy spinach and cheese filling.
Ingredients
- 2 Chicken breasts (boneless, skinless, medium to large)
- 8 oz Cream cheese (softened)
- 1 cup Spinach (fresh or frozen and thawed, squeezed dry)
- 2 cloves Garlic (fresh minced or garlic powder)
- Salt to taste
- Pepper to taste
- 1 tsp Paprika (optional)
- 1 tsp Italian seasoning or dried oregano (optional)
- Olive oil spray (or a tiny bit of oil to help browning)
- Toothpicks (helpful for sealing)
Instructions
- Mix the filling. In a bowl, stir together cream cheese, spinach, garlic, salt, and pepper.
- Prep the chicken. Pat the chicken breasts dry and carefully cut a pocket into the thick side of each breast.
- Stuff it. Spoon the spinach and cream cheese mixture into the pocket, making sure not to overfill.
- Seal it. Use toothpicks to close the opening securely.
- Season the outside. Sprinkle both sides with salt, pepper, paprika, and herbs; lightly spray with oil.
- Air fry. Preheat your air fryer if needed and cook at 375°F for about 16 to 20 minutes, flipping halfway through.
- Rest, then slice. Let the chicken rest for 5 minutes before slicing.
Notes
Make sure to dry the chicken thoroughly before seasoning. If using frozen spinach, squeeze out excess water.
