Delicious and comforting patties made with canned sardines, perfect for fall gatherings or a cozy weeknight meal.
Ingredients
- 2 cans of sardines in olive oil or water (drained)
- 1 large potato (cooked and mashed)
- 1/2 cup breadcrumbs (use gluten-free breadcrumbs if needed)
- 1/4 cup green onions (chopped)
- 1/4 cup fresh parsley (chopped)
- 2 cloves garlic (minced)
- 1 large egg (beaten)
- 1 teaspoon lemon juice
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- Olive oil spray (for air frying)
Instructions
- Gather your tools: Make sure you have an air fryer, mixing bowls, a fork, and a spatula ready to go.
- Prepare the sardines: Open the canned sardines and gently drain any excess oil or water. Place them into a large mixing bowl and use a fork to break them into smaller pieces.
- Mix the ingredients: Add the mashed potato, breadcrumbs, green onions, parsley, minced garlic, beaten egg, lemon juice, paprika, salt, and pepper to the bowl with the sardines. Gently combine everything until well mixed.
- Form the patties: Using your hands, shape the mixture into small patties (about 2-3 inches in diameter). You should yield about 8-10 patties depending on the size.
- Preheat your air fryer: Set your air fryer to 375°F (190°C) and let it preheat for about 5 minutes.
- Air fry the patties: Lightly spray the air fryer basket with olive oil. Place a few patties in the basket, making sure not to overcrowd them. Air fry for 10 minutes, flipping halfway through, or until they are golden brown and crispy.

Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze uncooked patties on a baking sheet and transfer to a freezer bag once firm.
