Description

Crispy on the outside and fluffy on the inside, these air fryer roasted potatoes are a cozy, quick side dish for any meal.


Ingredients

  • 1.5 pounds small Yukon Gold or baby russet potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • 1 tablespoon fresh rosemary or chopped thyme
  • 1 tablespoon chopped parsley for finishing
  • Lemon wedges for serving


Instructions

  1. Wash and dry the potatoes thoroughly. Cut larger potatoes into 1-inch pieces for even cooking.
  2. Bring a pot of salted water to a boil, add the potatoes, and simmer for 5 minutes. Drain and let steam dry.
  3. Toss warm potatoes with olive oil, salt, pepper, garlic powder, smoked paprika, and rosemary in a large bowl.
  4. Preheat your air fryer to 400°F (200°C) for 3 minutes.
  5. Arrange potatoes in a single layer in the air fryer. Cook at 400°F for 12–18 minutes, shaking every 5 minutes.
  6. Check for doneness; they should be golden brown and fork-tender. Add 2–3 more minutes for extra crispness if desired.
  7. Toss with chopped parsley and a squeeze of lemon. Serve hot.

Notes

Ensure even cooking by using similar-sized potato pieces. Adjust seasoning after cooking for the best flavor.
