Warm, melty nachos made in an air fryer with seasonal flavors, perfect for fall gatherings.
Ingredients
- 8–10 oz sturdy tortilla chips (thick-cut)
- 1 cup shredded cheddar or Mexican blend cheese
- 8 oz halal seasoned ground beef or ground chicken, cooked and crumbled
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup roasted corn (fresh or frozen, thawed)
- 1 small apple, thinly sliced (optional)
- 1/4 cup pickled jalapeños, sliced
- 2 tbsp chopped fresh cilantro
- 1/4 cup crumbled queso fresco or feta
- 1/3 cup sour cream or plain yogurt
- 1 tbsp lime juice
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- Pinch of salt and pepper
- Cooking spray or a light brush of oil
Instructions
- Prep your toppings: Cook and season the ground meat with smoked paprika, cumin, salt, and pepper. Keep warm.
- Mix sour cream with lime juice and a pinch of salt to make a quick crema.
- Layer the nachos: In a large, shallow air fryer basket or oven-safe dish, lay a single layer of tortilla chips. Scatter half the shredded cheese, then spoon on half the meat, beans, corn, and apple slices.
- Air fry in batches: Lightly spray with cooking spray, air fry at 350°F (175°C) for 3–5 minutes until cheese is melted. Add remaining chips and toppings, air fry another 3–4 minutes.
- Transfer to a serving platter. Sprinkle with queso fresco, cilantro, jalapeños, and drizzle with lime crema. Serve immediately.
Notes
Use sturdy chips to prevent sogginess; consider topping variations for a twist.
