Ingredients
- 6 large eggs
- ½ cup milk (or milk alternative)
- 1 cup chopped seasonal vegetables (zucchini, bell peppers, or kale)
- 1 cup shredded cheese (cheddar, feta, or mozzarella)
- ¼ cup diced onion
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional: fresh herbs (like parsley or basil) for garnish
Instructions
- Prep your ingredients: Start by chopping your vegetables and mincing your garlic.
- Whisk the eggs: In a large bowl, whisk together the eggs and milk until well combined. Add salt and pepper to taste.
- Sauté the vegetables: In a small skillet over medium heat, add olive oil. Once hot, add onions and garlic, sautéing until translucent. Then, add your chopped vegetables and cook for an additional 3-4 minutes until they soften.
- Combine everything: Gently fold the sautéed vegetables and shredded cheese into the egg mixture until evenly distributed.
- Air Fry the frittata: Preheat your air fryer to 320°F (160°C). Pour the mixture into a greased air fryer-safe pan. Cook for 12-15 minutes, or until puffed and a toothpick inserted comes out clean.
- Serve and enjoy: Remove the frittata from the air fryer and let it cool for a few minutes. Cut into wedges and serve warm, garnished with fresh herbs if desired.
