Ingredients
- 2 chicken breasts, cut into bite-sized pieces
- 1 cup of broccoli florets
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Prepare the chicken and vegetables: In a large bowl, combine the chicken pieces, broccoli, bell pepper, zucchini, olive oil, garlic powder, paprika, salt, and pepper. Toss everything together until well-coated.
- Preheat your air fryer: Set your air fryer to 375°F (190°C) and allow it to preheat for about 5 minutes.
- Cook the mixture: Once preheated, add the chicken and veggie mixture to the air fryer basket. Spread them out evenly to ensure they cook uniformly. Cook for 12-15 minutes, shaking the basket halfway through.
- Check for doneness: Use a meat thermometer to ensure the chicken has reached an internal temperature of 165°F (75°C). The vegetables should be tender and slightly caramelized.
- Serve and enjoy: Transfer the cooked chicken and veggies to a serving platter. You can pair this dish with a side of rice or quinoa for a complete meal.
