Ingredients

  • 4 large eggs
  • 2 small flour tortillas (or whole wheat)
  • 1 cup bell peppers (diced)
  • 1 small onion (diced)
  • 1/2 cup shredded cheese (your choice)
  • 1/4 cup milk (or non-dairy alternative)
  • 1 tsp olive oil or cooking spray
  • Salt and pepper to taste
  • Optional: Fresh herbs like cilantro or green onions for garnish


Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. Prep the tortillas by brushing with olive oil and forming them into cup shapes in the air fryer basket.
  3. Sauté the vegetables in a skillet until soft, about 3-4 minutes; season with salt and pepper.
  4. Whisk together the eggs and milk in a bowl, then mix in the sautéed vegetables.
  5. Fill the tortillas with the egg mixture.
  6. Add shredded cheese on top of each filled tortilla.
  7. Air Fry for 10-12 minutes, or until eggs are set and golden.
  8. Garnish with fresh herbs if desired, and serve warm.

Notes
