Ingredients
- 4 large eggs
- 2 small flour tortillas (or whole wheat)
- 1 cup bell peppers (diced)
- 1 small onion (diced)
- 1/2 cup shredded cheese (your choice)
- 1/4 cup milk (or non-dairy alternative)
- 1 tsp olive oil or cooking spray
- Salt and pepper to taste
- Optional: Fresh herbs like cilantro or green onions for garnish
Instructions
- Preheat your air fryer to 320°F (160°C).
- Prep the tortillas by brushing with olive oil and forming them into cup shapes in the air fryer basket.
- Sauté the vegetables in a skillet until soft, about 3-4 minutes; season with salt and pepper.
- Whisk together the eggs and milk in a bowl, then mix in the sautéed vegetables.
- Fill the tortillas with the egg mixture.
- Add shredded cheese on top of each filled tortilla.
- Air Fry for 10-12 minutes, or until eggs are set and golden.
- Garnish with fresh herbs if desired, and serve warm.
Notes
Don’t overfill the tortillas to allow the eggs to puff up. Experiment with spices for additional flavor.
