Ingredients
- 2 cups cooked chicken, shredded
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup shredded cheese
- 1/2 cup cream cheese, softened
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté the sliced mushrooms in olive oil over medium heat for about 5 minutes until golden brown and tender. Then add the fresh spinach, stirring until wilted. Season with garlic powder, onion powder, salt, and pepper.
- Combine the shredded chicken, cream cheese, Italian seasoning, and chicken broth in a large bowl and mix well.
- Add the sautéed mushrooms and spinach to the bowl and mix until well combined.
- Transfer the mixture into a greased baking dish and top with shredded cheese.
- Bake for 20 minutes or until the cheese is bubbly and slightly golden.

Notes
Use leftover rotisserie chicken to save time. Customize your cheese and watch the bake towards the end to prevent burning.
