A simple and elegant salmon dish infused with warm spices and garlic, perfect for cozy fall dinners.
Ingredients
- 4 salmon fillets (6 oz each), skin on
- 2 tablespoons olive oil
- 2 tablespoons za’atar seasoning
- 3 garlic cloves, finely minced
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon honey
- Salt and freshly ground black pepper to taste
- Fresh parsley or cilantro, chopped, for garnish
Instructions
- Prep your oven and pan: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment or lightly oil a roasting pan. Pat the salmon dry with paper towels.
- Make the za’atar garlic glaze: In a small bowl combine olive oil, za’atar, minced garlic, lemon zest, lemon juice, honey, and a pinch of salt and pepper. Mix until well blended.
- Season the fillets: Place salmon fillets skin-side down and brush the za’atar garlic glaze evenly over the top of each piece. Let them sit for 5–10 minutes so flavors meld.
- Sear then roast (best texture): Heat an ovenproof skillet over medium-high heat. Add a tablespoon of oil and sear the fillets skin-side down for 2–3 minutes until the skin crisps. Transfer the skillet to the oven and roast for 6–8 minutes, or until salmon reaches your desired doneness.
- Finish and serve: Remove from the oven, spoon any pan juices back over the fillets, and garnish with chopped parsley. Serve immediately with lemon wedges.
Notes
Choose quality salmon for best flavor. Don’t overcook to preserve moisture and tenderness. For a seasonal twist, try a streusel topping.
