Description

Sweet, salty, and tangy—this vibrant watermelon feta salad with balsamic is a refreshing summer favorite that comes together in minutes with just a handful of ingredients.


Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 cup feta cheese, crumbled (preferably block feta in brine)
  • 23 tbsp aged balsamic vinegar or balsamic glaze
  • Fresh mint leaves, torn (optional)
  • 1 tbsp extra virgin olive oil (optional)
  • Pinch of flaky sea salt (optional)


Instructions

  1. Chill the watermelon cubes in the refrigerator until ready to assemble.
  2. Just before serving, place the watermelon cubes in a large bowl or serving platter.
  3. Sprinkle crumbled feta cheese evenly over the watermelon.
  4. Drizzle aged balsamic vinegar or balsamic glaze over the top.
  5. Add torn mint leaves if desired, and a light splash of olive oil or pinch of sea salt to taste.
  6. Serve immediately, or store components separately and combine just before eating.
