Description

This Warm Baked Brie with Caramelized Onions & Fig Spread is a cozy, gourmet appetizer that blends rich, buttery onions with sweet fig jam and creamy Brie all wrapped in flaky puff pastry. Elegant yet effortless, it’s the perfect fall starter for entertaining or indulging solo.


Ingredients

  • 1 wheel of Brie (8 oz, double cream recommended)
  • 1 large yellow onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 tablespoon brown sugar
  • 12 tablespoons fig spread or fig jam
  • 1 sheet puff pastry (thawed if frozen)
  • 1 egg (beaten, for egg wash)
  • Fresh thyme or rosemary (optional)
  • Crusty bread or crackers (for serving)
  • Optional: 1 tablespoon balsamic vinegar
  • Optional: 2 tablespoons chopped walnuts or pecans


Instructions

  1. In a skillet over medium heat, melt butter with olive oil. Add sliced onions and cook for 10 minutes, stirring occasionally. Add brown sugar and cook another 20 minutes until golden and caramelized. Add balsamic vinegar if using. Set aside.
  2. Remove packaging from the Brie. Optionally slice off top rind for extra gooeyness.
  3. Spread fig jam over the Brie and top with caramelized onions. Add chopped nuts and herbs if desired.
  4. Place Brie in the center of the puff pastry. Fold the pastry over the top to seal and flip seam-side down. Brush with beaten egg.
  5. Bake at 375°F (190°C) for 20–25 minutes or until puff pastry is golden brown. Let rest 5–10 minutes before serving.
  6. Serve warm with baguette slices, crostini, or apple wedges.

Notes

Let the Brie chill before wrapping to make handling easier. Rest after baking to keep the cheese from spilling. Add flaky salt after baking for balance. For a variation, swap fig jam for cranberry sauce or add toasted nuts for texture.
