Ingredients

  • 2 medium sweet potatoes, scrubbed and cubed
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • Salt to taste
  • ½ to ¾ cup cottage cheese (full fat or low fat)
  • ½ avocado, sliced (optional)
  • 1 tablespoon roasted chickpeas or sunflower seeds (optional)
  • Chili flakes, to taste
  • 1 teaspoon date syrup or pomegranate molasses (optional)
  • Fresh herbs like parsley or cilantro
  • Lime wedge for serving


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with olive oil, smoked paprika, and salt.
  3. Spread on a baking sheet and roast for 25–30 minutes until crispy and golden.
  4. Spoon cottage cheese into your bowl (½ to ¾ cup).
  5. Add the roasted sweet potatoes on top of the cottage cheese.
  6. Top with sliced avocado, roasted chickpeas or sunflower seeds if using.
  7. Sprinkle chili flakes and drizzle with date syrup or pomegranate molasses for a sweet-savory flavor.
  8. Garnish with fresh herbs and a squeeze of lime.

Notes
