Ingredients
- 2 medium sweet potatoes, scrubbed and cubed
- 1 tablespoon olive oil
- ½ teaspoon smoked paprika
- Salt to taste
- ½ to ¾ cup cottage cheese (full fat or low fat)
- ½ avocado, sliced (optional)
- 1 tablespoon roasted chickpeas or sunflower seeds (optional)
- Chili flakes, to taste
- 1 teaspoon date syrup or pomegranate molasses (optional)
- Fresh herbs like parsley or cilantro

Instructions
- Preheat oven to 400°F (200°C).
- Toss cubed sweet potatoes with olive oil, smoked paprika, and salt.
- Spread on a baking sheet and roast for 25–30 minutes until crispy and golden.
- Spoon cottage cheese into your bowl (½ to ¾ cup).
- Add the roasted sweet potatoes on top of the cottage cheese.
- Top with sliced avocado, roasted chickpeas or sunflower seeds if using.
- Sprinkle chili flakes and drizzle with date syrup or pomegranate molasses for a sweet-savory flavor.
- Garnish with fresh herbs and a squeeze of lime.
Notes
